About this coffee
Some drinks refuse to stay on the cafe menu, and this is one of them. We took our spiced mocha — deep cocoa, a slow-blooming chilli warmth, soft cinnamon and a date-like sweetness — and concentrated it into a single-serve Drop built on washed Huehuetenango coffee. The bitterness is kept deliberately minimal so the spice glows rather than burns. One drop, one mug, one very good ten-minute holiday.

Brewing Suggestions
For the signature serve, dissolve one drop in 180 ml of hot milk and stir until glossy — the chilli arrives politely at the end of each sip. With hot water it becomes a spiced black mocha; over cold milk and ice it turns into a quietly addictive iced version. Winter evenings were the original test kitchen.
