Finca El Mirador — the lookout — sits on a Huila ridge with views its coffee frankly deserves. The Cardona family ferments in small overnight tanks and dries on parabolic beds, giving their washed lots the caramel-clean profile that made us choose them to represent Colombia in this series.

About this coffee
Colombia earned its reputation on cups exactly like this one: sweet, balanced and quietly generous. We source this lot from Finca El Mirador in Huila, roast it medium for caramel and toasted nut, then grind, dose and seal it into single-serve drip sachets on roasting day. The format is gloriously simple — unfold, perch on your mug, pour hot water in slow circles — but the coffee inside is unapologetically single-origin, and it shows in the finish.

Brewing Suggestions
Bloom first: a small pour, thirty seconds, then continue to roughly 150 ml. Drink it black to catch the caramel, or add warm milk for something closer to a gentle latte. Keep a sachet at your desk for the meeting that should have been an email.
