Finca San Ignacio is tended by a small community of Jesuit priests in the Huehuetenango highlands, where coffee grows under old shade trees beside the community’s orchards. Stewardship here is measured in generations rather than seasons, and it shows in the immaculate, patient quality of every washed lot they send us.

Washed and roasted medium-dark, Chocolate Oak pours deep cocoa and toasted nut over a warming thread of spice, with caramel sweetness underneath and a long, gently fruity finish. Grounded, generous and quietly complex — from 250 g to 1 kg, whole bean or ground, roasted to order in Dhaka.
Brewing tips

From the farm
Finca San Ignacio sits on forested slopes in Huehuetenango, Guatemala, where a small Jesuit community farms shade-grown coffee with the long view that faith tends to bring. Their washed lots arrive immaculate; this first collaboration will not be the last.
Brewing Suggestions
A natural fit for the moka pot, where cocoa and spice knit into something dessert-like. French press at 1:15 rounds it out for slow mornings, and it takes milk with grace. If you brew espresso, expect a thick, chocolate-forward shot.
