Traceability & Freshness
All five lots began as one harvest at Finca El Mirador, high above Buesaco in Nariño, where the family has become as curious about fermentation as we are. They ran the five treatments in small tanks beside the washing station, logging temperatures and cultures like lab notes. When the samples reached Dhaka, our cupping table went quiet — then very loud.

We took one exceptional harvest from Nariño, Colombia and fermented it five different ways — playing with a whole spectrum of microorganisms, from homegrown cultures to wild yeasts — then light roasted each lot to show its colours. The result: a five-pouch, 250 g tasting flight unlike anything else we sell.
Brewing tips

About this coffee
The Ferment Edit is what our roastery does after hours. For Nano-X '25 we split a single high-altitude harvest from Nariño into five batches and turned each over to a different fermentation — homegrown cultures, wild yeasts and everything between — before light roasting them identically. Same farm, same varietal, five wildly different cups: one leans tropical, another wine-like, another spiced and strange in the best way. It is the clearest demonstration we know that processing writes half of coffee's flavour.

Brewing Suggestions
Brew all five the same way — pourover at 1:16 is our pick — and taste them side by side while warm, then again as they cool; the differences widen dramatically. Keep notes. Whichever pouch you finish first is telling you something about your palate.
