Traceability & Freshness
Finca Buena Vista clings to the limestone ridges of Huehuetenango, where warm dry winds let coffee grow at altitudes most farms cannot reach. The family there has spent recent harvests experimenting with sealed-tank fermentation, checking each batch by cupping before it earns the trip to the washing channel. This lot is the experiment that convinced us — and them — it was worth the risk.
About this product
Our first anaerobic washed release, and a coffee that earns its name. Grown high in Huehuetenango, Guatemala and fermented in sealed tanks before washing, it brews a clean, spiced cup — think mulled citrus, dried fruit and a nutty base — with lively acidity and a crisp, complex finish. Medium roasted; available in 250 g, 500 g and 1 kg.
Brewing tips

About this coffee
Highland Spice is what happens when careful fermentation meets serious altitude. This debut lot ferments in sealed, oxygen-free tanks before being fully washed, a technique that layers warm, spice-cabinet complexity over the clarity a washed coffee is known for. In the cup: candied citrus peel, dried fruit and gentle baking spice, carried by bright, structured acidity and a crisp finish that keeps asking for another sip.

Brewing Suggestions
Give this one clarity: a pourover at 1:16 with water just off the boil shows the spice and citrus at their most articulate. Aeropress brewers should go slightly finer with a shorter steep for a juicier cup. We would keep milk away — the complexity is the point.
