Traceability & Freshness
Finca Las Nubes sits so high in Huehuetenango that the pickers work above the morning cloud line, which is exactly what the name promises. This is our first season working with the family, who dry their best cherries slowly on patios overlooking the valley. Their inaugural lot for us was too good to fold into a blend, so it stands alone as Valley Gold.

Brewing tips

About this coffee
Valley Gold is the kind of lot that makes a roaster's week. Grown high in the folded valleys of Huehuetenango and dried whole in the mountain sun, it pours floral and juicy, with a shimmering acidity and a finish so clean it reads almost like fine tea. We roast it gently to a medium that flatters the florals rather than flattening them. This is a strictly limited seasonal release from a brand-new farm partnership — a small-batch valley gold worth savouring while it lasts.

Brewing Suggestions
This lot rewards gentle brewing: a pourover at 1:16–1:17 with water at 92–94°C keeps the florals intact and the finish silky. If you brew AeroPress, go slightly finer with a shorter steep for a juicy, articulate cup. We would keep this one black — the tea-like finish is the whole point.
