Traceability & Freshness
The members of Konga Cooperative farm small garden plots high in Yirgacheffe, and their experimental shed is where this lot was born. Cherries are hand-sorted at peak ripeness, sealed in tanks for a slow anaerobic ferment, then dried patiently on raised beds. Only a handful of bags reach Dhaka each season, and we roast them like the rarity they are.

About this coffee
Amber Sunrise is what happens when careful fermentation meets exceptional fruit. Whole cherries are sealed in low-oxygen tanks before sun-drying, a slow anaerobic process that pushes the sweetness towards ripe mango and stewed berries and gives the body a distinctly syrupy weight. We roast it to a considered medium so the fruit stays luminous and the finish stays clean. It is complex, effortlessly memorable, and never gimmicky.

Brewing Suggestions
Brew it as a pourover at 1:16 to let the layered fruit unfold cup by cup, or as an inverted AeroPress at 1:14 for a denser, more syrupy expression.
