Fazenda Santa Clara was an unknown name when we bought their debut lot years ago; today their fermentation work is the talk of Mogiana. This anaerobic natural is their boldest release yet - one taste of the sample tin and our roasting team stopped the meeting to re-cup it.

This anaerobic natural comes from Fazenda Santa Clara, a Mogiana partner we have championed since their debut, and it is everything the process promises: bold, funky-sweet and gloriously fruit-forward, with ripe red fruit, tamarind-like tang and a syrupy body. A medium roast keeps it grounded. From 250 g to 1 kg, ground for any brewer.
Brewing tips

About this coffee
We have bought from Fazenda Santa Clara since their very first specialty harvest, so when their anaerobic experiment arrived we cupped it with high hopes - and it still beat them. Whole cherries sealed in oxygen-starved tanks develop a controlled, funky sweetness before slow sun-drying, and the medium roast frames it perfectly: ripe strawberry and red plum up front, a tamarind brightness through the middle, and a heavy, syrupy body that lingers. Loud in the best way.

Brewing Suggestions
Immersion methods flatter the funk: try a French press or Aeropress for a rich, jammy cup, or pull it as espresso for a wildly fruity shot that turns a flat white into dessert. As a cold brew it becomes pure fruit punch - in the best possible sense.
