Finca El Amanecer has supplied our cleaner washed lots for years, but this season the family asked to try something braver: fermentation steered only by their farm's native microbiome. They monitored the tanks day and night with nothing added and nothing controlled, and sent us the single most expressive sample of their history.

Brewing tips

About this coffee
Our Producer Series exists for exactly this kind of risk. At Finca El Amanecer in Huehuetenango, the family fermented this harvest with nothing but the native microbiome - the wild yeasts and bacteria that live on their own cherry skins and tank walls - and let the farm decide the flavour. The gamble paid off: a light roast reveals ripe tropical fruit, a gently savoury depth and an expressive, shape-shifting finish. Wild in the truest sense, and available first through our Dhaka studio.

Brewing Suggestions
Treat it gently: a pourover at 92-94 C with a slightly coarser grind lets the wilder notes arrange themselves. Cup it against a washed coffee from the same region if you can - the difference is the entire point of this series.
