Fazenda Vale Dourado dedicates its best patios to pulped naturals, skinning the cherries within hours of picking and raking the sticky beans through long Mogiana afternoons. The family judges dryness by touch and sound, the way their grandfather taught. Their reserve lots sell out at origin most years; we book ours before the harvest is even finished.

Back by popular demand — and our own. The Sun-Dried Reserve is our favourite pulped natural: cherries skinned, then sun-dried in their sweet fruit mucilage on the patios of Alta Mogiana, Brazil. This harvest brings a medium body and a syrupy, honeyed mouthfeel with chocolate, ripe fruit and caramel — clean, bright and endlessly drinkable. 250 g to 1 kg.
Brewing tips

About this coffee
Pulp sun-drying is a patient middle path: the cherry's skin comes off, but the bean dries wrapped in its own sweet mucilage under open sun. Done well — and this farm does it very well — it yields a cup with a washed coffee's cleanliness and a natural's syrupy sweetness. This harvest of our all-time favourite reserve carries chocolate, ripe fruit and caramel over a medium body, finishing bright and clean enough to drink all day.

Brewing Suggestions
Gloriously flexible. As a pourover it is bright and fruit-forward; in a French press the syrupy body takes over; as espresso it pulls sweet, caramel-heavy shots that need no sugar. If one bag has to serve a whole household's brewing habits, make it this one.
