Traceability & Freshness
The blend's chocolatey heart comes from Fazenda Serra Azul in the rolling hills of Sul de Minas, where the family pulps and sun-dries their cherries for maximum sweetness. Its washed partner is grown by smallholders high above Buesaco in Nariño, adding the clean, quiet lift that keeps the blend from feeling heavy. The two have shared this recipe since the blend was first mixed.

Named for the scarlet shimul that sets Bengal's roadsides alight, this medium-dark blend is all comfort: chocolatey, sweet and nutty with low acidity, wonderful black or with a splash of milk. The shimul tree announces spring in scarlet; this blend announces the morning just as warmly. A marriage of a natural-process lot from Sul de Minas, Brazil and a washed coffee from Nariño, Colombia, it drinks chocolatey and sweet with a soft nutty base and low acidity — comfort in cup form. Sealed into single-serve easy pour sachets, it needs nothing from you but hot water and three minutes.

Brewing Suggestions
Perch the sachet's paper hangers on your cup rim and pour hot water in slow, circular passes — around 160 ml over three minutes. For a stronger cup, steep the bag a minute longer before lifting it out. It takes milk and a little sugar gracefully, cha-style, when the day demands it.
