The headline act comes from Gedeb Highland Micro-mill in Yirgacheffe, where a father-and-daughter team ferments hand-sorted cherry in sealed tanks before slow honey drying. Its travelling companion is grown at Fazenda Pedra Alta in Mogiana, Brazil — proof that quiet, classic processing can hold its own beside the avant-garde.

Brewing tips

From the farm
The Ethiopian lot comes from Gedeb Highland Micro-mill, a family-run station experimenting boldly with sealed-tank fermentation; the Brazilian answer is grown by our partners at Fazenda Pedra Alta in Mogiana. Two farms, six thousand miles apart, both obsessive about ripe cherry.
Brewing Suggestions
Use the same recipe for both — a pourover at 1:16 is ideal — so the coffees, not the technique, do the talking. Taste the Brazil first, then the Ethiopia; sweetness before spectacle. Notes in the box margin are encouraged.
